First off A Cajun Life Food Cart is not in Portland….Not yet, at least.
This GR8 Food Cart is located in Damascus. They also have a booth every Saturday morning at the Gresham Farmer’s Market. From what I hear, there is a good chance that this Food Cart will be adding a second cart somewhere in Portland before the end of 2013.
Don’t wait for them to come to Portland, A Cajun Life is open Friday and Saturday evenings. Make the trek out to Damascus. You will not be disappointed.
Food Cart Magic
Chris Fontenot makes The Food Cart Magic happen at the A Cajun Food Cart!
The A Cajun Life Food Cart specializes in Cajun cuisine. I recently heard Chris Fontenot, the owner of the A Cajun Life Food Cart describe “Cajun Cooking” to a prospective customer this way – “Cajun is a style of cooking from Southwest Louisiana. Cajun also refers to the kind of ingredients used in a dish and well as the spices and seasonings.”
I love the food that Chris serves!!
I, by no means, am any kind of an authority on Cajun cuisine. I have however, heard from many people more versed in Cajun food than I, and they swear that Chris nails it.
Chris grew up in Eunice, Louisiana and that is where his culinary roots are from.
Eunice is Louisiana’s Prairie Cajun Capital, it is the home of the World Championship Crawfish Etouffee Cook-off, and the Zydeco Cajun Prairie Scenic Byway runs right through it. Eunice is also the home to the Eunice Courir de Mardi Gras, one of the largest Courir de Mardi Gras’ in the region.
If you want to cook authentic Cajun food, Eunice seems like a wonderful place to grow up!
I had to smile when researching this article. The local paper – Eunice Today has a “Mardi gras” section on the front of it’s website. I think that the world would likely be a better place if every community had their own annual mardi gras. www.eunicetoday.com/pages/mardi_gras
I hope to visit Eunice some day. Perhaps I will get the chance to be a judge at some future World Championship Crawfish Etouffee Cook-off. That would be a blast!

Authentic Cajun Gumbo
My ACL dish favorite is the Cajun Gumbo. I will most likely never forget the first time that I tasted the ACL Gumbo. I brought the cup up to lips and took a sip of the decadent broth and I was in rapturous delight. So amazing.
Remember, I was out in Damascus, Oregon standing outside of a kind of ugly red Food Cart for goodness sakes! I never expected to experience culinary euphoria.
That, by the way, is part of the joy of going on Food Cart Adventures. There are many, many glorious gastronomic treasures awaiting your discovery.
While I am far from an expert in Cajun cuisine I have enjoyed many a gumbo and the A Cajun Life gumbo is the best gumbo that I have ever had. Hands down. Bar none.
I almost forget to mention this – Chris has his sausage and tasso flown in from Eunice Louisiana. Chris has an account with United Airlines cargo and he heads to PDX airport 2-4 items a months to pick up his shipment of Cajun goodness.
French bread stuffed with crawfish cheese sauce. These are good! I love the bread that Chris uses. What more do you want – Cheese sauce, good bread, and crawfish? Simple, yet wonderful! – As my friend Roy Swope owner of the Retrolicious Food Cart says “When it come to cooking, sometimes simple is best.”
This is of the most popular dishes at ACL. Chicken, sausage and tasso gravy served over rice. Very flavorful and large portions that fill you right up.
A Cajun Life – It is a Brand, Not a Food Cart
Even before Chris opened The A Cajun Life Food Cart, he had a brand. In fact, he opened the Food Cart in order to begin the process of sharing his the A Cajun Life with the world.
For Chris the A Cajun Life Food Cart was just a step in a process that he has continued.
You can now buy A Cajun Life T- Shirts. T- Shirts are a simple, inexpensive way to begin to extend a Food Cart brand. Chris did not stop there however…. Can you say seasoning?

I have this seasoning and I love it. I find myself using it on all kind of things.

Please note – The A Cajun Life brand has reach a place in it’s development, where for now, it needs distinctive social media channels. The Food Cart is only in Oregon. The seasoning can now be purchased nationwide.
Already, the seasoning has fans from other parts of the country who will most likely never visit the Food Cart. Some of the seasoning fans do not even know that the Food Cart exists.
Hence – Chris is wisely developing social media channels for those who are fans of the Food Cart(s) and social media channels for those who are fans of the seasoning. I, for one know the importance of having separate social media channels for different projects.
